Chocolate Chip Butterscotch Cookies

Ingredients

1 cup unsalted butter, softened

¾ cup brown sugar

¼ cup granulated sugar, you can also use Stevia

2 egg

2 teaspoons vanilla extract

2 cups all purpose flour

2 teaspoons. Cream of Tartar Powder

1 teaspoon baking soda

½ teaspoon salt

1 cup semi-sweet chocolate chips

1 cup butterscotch chips

Preheat oven to 350 degrees F.

In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until light in color and fluffy. Add egg and vanilla and blend in.

In a separate bowl, mix flour, cream of tartar powder, baking soda and salt. Add flour mixture to the dough. Stir in chocolate and butterscotch chips.

Using a standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet.

Bake for 8-13 minutes, until slightly golden brown around the edges. (The tops will not brown). Let stand for a few minutes before removing to a wire rack to cool completely.
