Chocolate Chip Butterscotch Cookies

  • 1 cup unsalted butter, softened

  • ¾ cup brown sugar

  • ¼ cup granulated sugar, you can also use Stevia

  • 2 egg

  • 2 teaspoons vanilla extract

  • 2 cups all purpose flour

  • 2 teaspoons. Cream of Tartar Powder

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 1 cup semi-sweet chocolate chips

  • 1 cup butterscotch chips

  1. Preheat oven to 350 degrees F.

  2. In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until light in color and fluffy.  Add egg and vanilla and blend in.

  3. In a separate bowl, mix flour, cream of tartar powder, baking soda and salt. Add flour mixture to the dough. Stir in chocolate and butterscotch chips.

  4. Using a standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet.

  5. Bake for 8-13 minutes, until slightly golden brown around the edges. (The tops will not brown). Let stand for a few minutes before removing to a wire rack to cool completely.
